Ingredients:

Duck (1.5-2 kg)

2 apples

200 g cranberries (fresh or frozen)

2 tbsp honey

2 tbsp olive oil

1 tsp dried thyme

Salt, black pepper — to taste

3-4 sprigs of rosemary

1 orange

1 tbsp butter

Preparation:

Prepare the duck: Rinse the duck, pat it dry with a paper towel, and rub it with salt and pepper. Place a couple of sprigs of rosemary inside the duck, along with half of the chopped apple and a few slices of orange.

Stuffing: In a bowl, mix the remaining apples, cranberries, honey, and thyme. Use this mixture to stuff the duck. Pinch the opening and secure it with toothpicks.

Roasting: Heat olive oil in a skillet, sear the duck on all sides until golden brown. Then transfer it to an oven-safe dish.

Baking in the oven: Preheat the oven to 180°C (350°F). Roast the duck for about 1.5-2 hours, basting it occasionally with the juices. Add the butter 20 minutes before it’s done.

Serving: Remove the duck from the oven, let it rest for a while, then carve and serve with a side of potatoes or couscous.
