350 g fresh strawberries
2 eggs
200 g sugar
60 g vegetable oil (neutral taste)
150 g yogurt or kefir
250 g flour
8 g baking powder
Zest of one lemon (optional — or use vanilla)
Wash, clean, and dry the strawberries. Cut large berries in half.
In a bowl, beat the eggs with sugar until light and fluffy.
Add the oil and yogurt, and mix well.
In a separate bowl, mix the flour with the baking powder and sift into the wet mixture. Add lemon zest.
Line a baking dish with parchment paper. Arrange the strawberries on the bottom.
Pour the batter over the berries.
Bake at 180 °C (356 °F) for about 40 minutes, until golden and set.
Let the cake cool slightly, then dust with powdered sugar or garnish with a mint leaf. Enjoy the soft, fruity goodness in every bite!
