Ingredients:

2 cup fresh pumpkin puree (made from blending fresh pumpkin)
3 eggs
0.5 cup sugar
1 packet of vanilla sugar
1 cup flour
1 tablespoon baking powder
1 tablespoon olive oil
Zest of one lemon (before grating, place the lemon in boiling water for 5 minutes)
Instructions:

Step 1: Prepare the Pumpkin

Cut a fresh pumpkin in half and remove the seeds.
Peel the pumpkin and cut it into small pieces.
Blend the pieces in a blender until you achieve a smooth pumpkin puree.

Step 2: Mix the Ingredients

In a bowl, beat 3 eggs and 0.5 cup of sugar until you get a thick white foam.
Add the packet of vanilla sugar to the egg mixture and continue to beat.

Step 3: Combine Flour and Baking Powder

In a separate bowl, mix 1 cup of flour with 1 tablespoon of baking powder.
Gradually add the flour mixture to the egg mixture, stirring gently.

Step 4: Add the Remaining Ingredients

Then, add the pumpkin puree, olive oil, and lemon zest. Mix well until all ingredients are fully incorporated.

Step 5: Baking

Preheat the oven to 350°F (175°C).
Grease silicone muffin molds with oil.
Spoon the batter into the molds, filling them about 2/3 full.

Step 6: Bake

Place the molds in the preheated oven and bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, let the muffins cool before removing them from the molds.
