We present two recipes for oven-roasted pumpkin - one sweet and one savory. Both are delicious in their own way and incredibly healthy.
Ingredients:
Pumpkin - 500 g
Apples - 600 g
Raisins - 40 g
Nuts - 50 g
Honey - 3 tbsp
Cinnamon - 1 tsp
Butter - 60 g
The roasted pumpkin with honey will taste better if you use sour apples. Preheat the oven to 180°C. Peel the pumpkin and remove the seeds, then cut it into large cubes. Cut the apples into the same size pieces. Soak the raisins in boiling water for 10 minutes.
Grease a baking dish with butter. Place the chopped pumpkin, apples, and raisins in the dish. Drizzle with honey and sprinkle with nuts. Optionally, add cinnamon. Also, place any remaining butter in the dish. Bake the pumpkin with honey in the oven for about 25-30 minutes.
Ingredients:
Pork - 500 g
Pumpkin - 500 g
Onion - 1 piece
Garlic - 2 cloves
Sunflower oil - 2 tbsp
Thyme, rosemary to taste
Salt, pepper to taste
Preheat the oven to 180°C. Peel the pumpkin and remove the seeds, then cut it into large pieces. Rinse the pork and dry it with paper towels to remove excess moisture. Cut it into large chunks. Slice the onion (preferably red) into half rings and the garlic into thin slices.
Heat the oil in a pan. Add the meat and sauté for 5-7 minutes over low heat.
In a heat-resistant baking dish, layer the pieces of pumpkin, sautéed meat, onion, and garlic. Season with salt and pepper to taste. Add your favorite spices - rosemary and thyme work well. Cover the dish with a lid or foil. Bake the pumpkin with meat in the oven for 40 minutes at 180°C.
