ROXY shares a recipe for vegan cookies shaped like coffee beans. In this recipe, banana replaces eggs, coconut oil substitutes for butter, and cocoa adds a cheerful touch! Add coffee if desired. Ready to bake?
140 g banana
100 g coconut oil
80 g sugar
250 g flour
20 g cocoa powder
2 g ground coffee (optional)
6 g baking powder
A pinch of salt
Step 1
Blend the banana and sugar with an immersion blender until it becomes a smooth purée.
Step 2
Add warm coconut oil and blend again until smooth and well combined.
Step 3
Transfer the mixture to a bowl, add the dry ingredients—flour, coffee, baking powder, and sifted cocoa powder. Mix into a dough.
Step 4
Form the dough into cookie shapes about the size of a large walnut. Place them on parchment paper and make a line in the center with a wet knife to mimic a coffee bean shape.
Step 5
Bake in a preheated oven at 180°C (350°F) for 15-18 minutes.
